小麦（学名：TriticumaestivumL.）是禾本科、小麦属一年或越年生草本植物。秆直立，丛生，叶鞘松弛包茎，叶舌膜质，叶片长披针形。穗状花序直立，小穗含多小花，颖卵圆形，外稃长圆状披针形，内稃与外稃几等长。花果期5-7月。
小麦的颖果是人类的主食之一，磨成面粉后可制作面包、馒头、饼干、面条等食物，发酵后可制成啤酒、酒精、白酒（如伏特加）。面粉除供人类食用外，少量用来生产淀粉、乙醇、面筋等。小麦的淀粉还有消炎、止疼、祛湿的作用，小麦的面筋可用于制造味精。
